Here’s all you need to know, babycakes:
Have 10–15 extra minutes? Brown the drained corn in your skillet before adding everything else. Totally optional, but totally worth it.
1 can corn + ⅓ cup sour cream + ⅓ cup grated Parmesan + a dash of garlic salt.
Drain your corn, mix everything together, heat it until it’s warm and creamy, and wah-lah—regular canned corn just got herself a little makeover.
Want some Tajín? Throw it in. Want a little more cheese? You know I’m not stopping you.

The Backstory
We LOVE a food truck.
And if there’s Mexican street corn on the menu? Honey, we’re probably getting it. Corn all dressed up with the creamy goodness, cheese and seasoning—what’s not to love?
But I wanted something I could make at home that was cheap, easy, and just different enough from our regular sides.
Because don’t get me wrong:
Buttered corn and mashed potatoes belong in the Side Dish Hall of Fame forever and ever, amen.
But sometimes you look at that can of corn in the pantry and think:
Surely we can give her a little razzle-dazzle tonight.
And we can.
This isn’t me claiming to make authentic Mexican elote with a can of corn and Parmesan. 😂 This is my street-corn-inspired, weeknight, use-what-I-have version.
And for something that takes basically no effort? She’s GOOD.
What You’ll Need
- 1 can corn, drained
- ⅓ cup sour cream
- ⅓ cup grated Parmesan
- A dash of garlic salt
- Tajín, optional
That’s it.
No 14 ingredients. No special grocery trip. No standing over the stove wondering why you chose a side dish that requires more effort than the actual dinner.
How I Make It
Drain your corn and add it to a small skillet.
Got an Extra 10–15 Minutes?
I highly recommend letting the corn cook in the skillet by itself for about 10–15 minutes, stirring occasionally, until some of those little kernels start turning golden.
It adds a roasted flavor and takes this from “hey, that’s good corn” to “okayyyy, what did you do to this corn?”
Then add your sour cream, Parmesan and garlic salt. Stir everything together and heat until warm and creamy.
In a Rush?
Skip the roasting, babycakes.
Dump the drained corn, sour cream, Parmesan and garlic salt into the skillet, heat it through, and call it dinner.
Is the roasted version a little better? Yep.
Is the expedited version still very tasty when everybody’s hungry and you’re trying to get food on the table? Also yep. 😂
Then taste and adjust. More Parmesan? Go for it. Tajín? Sprinkle away. Prefer mayo instead of sour cream? Swap it.
